It’s pretty simple. Without them, I notice I have ravenous children within an hour of finishing first breakfast. Not to mention, blood sugar levels are out of whack and focus during (home)school is almost nonexistent. So you could say I have some healthy external motivation to prep ahead and start our day off on the right note… with PROTEIN.
Why they are vital for this momma too
I love to prep breakfast the day before so that all I have to do is pop it in the oven to warm while I’m getting ready for the day or starting a load of laundry. As much as children need a high protein start to the day, this momma definitely does too.
If you tend to start your day with a coffee breakfast but seem to struggle with the afternoon slump that most of us are familiar with, just try it! Stabilizing blood sugar is crucial. It makes a world of a difference in who I can be for my family that day so it’s a high priority all around. In our home this recipe is sure to be on rotation for just that.
Prep ahead ideas for your freezer
- Cheese: If you buy blocks of cheese like we do from Azure Standard, shred them in bulk and then freeze in freezer safe bags. This is our favorite cheese. We’ve tried every flavor. You can’t go wrong!
- Beef: I like to have a big batch of cooked frozen ground beef to pull from to add to recipes like this one.
- Diced Potatoes: We almost always have a large box of pre-diced potatoes in our freezer from Azure Standard. It cuts down on prep time quite a bit and is often is cheaper than buying a bag of potatoes from the store.
- Milled Flour Sourdough Pie Crust: I like to make my pie crust recipe in large quantities, individually wrapped, and then lay flat in one large baggie to help with easy, delicious crusts to pull from at all times.

How to make this protein rich breakfast quiche
Preheat oven to 375.
Roll out pie crust and press into a 9” greased pie pan, then crimp the top edges if desired.


Brown the ground beef. If you are not using pre-diced frozen potatoes, then it’s time to peel and dice the potatoes.

In a large bowl, whisk the eggs.

Add the milk, salt, garlic powder, onion powder, and smoked paprika. Stir to combine well. Add cheese, sour cream, and browned beef to the egg mixture. Stir until incorporated.

Pour all combined ingredients into prepared pie dish.

I like to do a rough egg wash over the crimped part of the crust but it is not a must.

Bake for 50-60 minutes or until the center is completely set and edges of crust are brown. Just be sure to keep an eye on it throughout the cook time watching to be sure that the crust isn’t getting too brown.

Let cool for 5-10 minutes before slicing and serving.

Storage
Let the quiche cool completely and then store in an airtight container for up to 4 days in the refrigerator or in the freezer for up to two months.
You can freeze whole or cut leftover quiche and individually wrap in plastic wrap. Then place in a freezer bag for easy grab and warm breakfasts.

- 1/2 cup shredded cheese of choice
- 1/2 cup sour cream
- 2.5 teaspoons salt
- 1 teaspooon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked papika
Instructions
- Preheat oven to 375.
